Crunchy Mama D’s Oatmeal

Now that we have two kiddos under 3 and I’m back to work part-time (back full-time in January), I have been trying really hard to make my mornings easy and as stress-free as possible, while maximizing sleep! One way I have been doing that is making a week’s worth of oatmeal and dividing it up for the work week on Sunday. Having a delicious and pretty healthy breakfast is a must-have for busy mamas (whether you’re working or not!). The great thing about oatmeal is that you can mix in pretty much anything, and, it’s TASTY! I keep mine pretty simple with just some raisins, maple syrup, coconut oil, cinnamon, and vanilla extract. Check out my recipe and add-in ideas below for a filling and simple breakfast all week!

Ideas for Oatmeal Add-ins

  • Protein Powder
  • Nuts (i.e. walnuts, almonds, etc.)
  • Raisins
  • Craisins
  • Coconut Oil
  • Shredded Coconut
  • Vanilla Extract
  • Cinnamon
  • Pumpkin Puree
  • Nutmeg
  • Flax Meal 
  • Sweeteners (i.e. Maple Syrup, Stevia, Brown Sugar)
  • Berries
  • Chopped Apples
  • Brewer’s Yeast for nursing mamas
  • Pumpkin Seeds
  • Chia Seeds
  • Liquid for thinning (i.e. Half & Half, Milk, Almond Milk, Coconut Milk, Soy Milk, etc.)

Ingredients
  1. 3 cups Rolled Oats
  2. 6 cups Water
  3. 1/4 tsp Salt
  4. Add-ins of your choosing
Instructions
  1. In a large pot, combine oats, water, and salt. Bring to boil
  2. Cook on a rolling boil for a couple minutes.
  3. Reduce heat to medium and cook for about 10-15 minutes while stirring frequently
  4. If desired, begin adding your add-ins or wait to add them in until after oatmeal is finished cooking
  5. Once oatmeal is cooked to desired consistency, remove from heat, let cool
  6. Divide into 5 servings
Notes
  1. I use a cast iron dutch oven to cook the oatmeal on the stove- it's the perfect size for a big batch and it's super easy to clean afterwards!
  2. *Cooking times and temperatures may vary from your range (gas vs electric, etc.)- use your best judgement
