Weekends seem to always be chaotic at our house. Even with just one kiddo, we’re constantly running around, and sometimes, meal planning falls to the bottom of our list…or completely off it.

I’d be a total liar if I said I plan out all my meals ahead of time. Even when I do, I don’t even follow it half the time (ok…more like 3/4 of the time) and we end up making breakfast for dinner instead. We LOVE breakfast in our house. It’s delicious, quick, and filling because we always do a protein- so important! 

I also wish I could say I was one of those super creative Pinterest moms…I am a far cry from it, people. Seriously. I’m lucky if I can get my kid’s ham sliced fast enough for her to shovel it into her mouth at warp speed. I wish I could say I make her cute little animal face pancakes each week. But who am I kidding? Ain’t nobody got time for that. 

So, for all of you other non-Pinterest mamas out there, here are our favorite simple breakfast “recipes” for your own chaotic household! :)

"Dippy" Eggs & "Soldiers"
Serves 1
When my husband was growing up, whenever he had toast with his sunny side up eggs, his mom would cut the toast into strips and my husband always knew them as "soldiers".
Write a review
  1. 2-3 eggs (depending on your preference- we like organic, free-range eggs)
  2. 2 slices of toast (we prefer whole wheat)
  3. Salt and pepper to taste
  1. Spray a little cooking spray into a skillet
  2. Crack eggs into skillet, being sure to keep them intact and separated from each other
  3. While eggs are cooking, place toast in toaster
  4. Once eggs are cooked on one side, carefully flip them over, being sure to not break the yolks
  5. Cook the eggs enough so that you still have runny yolks
  6. Butter your toast and slice into strips
  7. Serve with OJ or milk and enjoy!
Hearty Hash
Serves 1
Protein packed, hearty breakfast hash perfect for the whole family! This recipe serves 1 so adjust ingredients appropriately.

  1. 2-3 eggs (depending on your preference)
  2. Handful of spinach (washed and dried)
  3. 1/2 cup cooked, diced sweet potato
  4. 1 large sausage (I LOVE Niman Ranch Apple Cinnamon Breakfast Sausage)
  5. 1 oz. feta cheese
  6. Avocado oil (or olive oil, coconut oil, etc.- any healthy oil)
  1. Dice cooked sweet potato
  2. Dice sausage into chunks
  3. Pour a little oil in skillet and warm on medium heat
  4. Sautee spinach until wilted
  5. Add in sausage
  6. Add in sweet potato
  7. Crack eggs into skillet and scramble with other ingredients
  8. Once eggs and other ingredients are blended and cooked well, crumble feta cheese into skillet
  9. Let feta melt a little and take skillet off heat
  10. Serve with OJ or milk and enjoy!

Quick Breakfast Burritos
Serves 2
Quick and easy breakfast burrito that you can wrap up and take on the go for those busy weekend mornings!

  1. 2 large tortillas (your choice- we like regular flour tortillas)
  2. 4 eggs (we prefer organic, free-range)
  3. Shredded Mexican cheese (or cheddar, etc)
  4. Salt and pepper to taste
  5. Any add-ins you want (tomatoes, spinach, diced cooked potatoes, etc.)
  1. Spray skillet with a little cooking spray
  2. Crack eggs into skillet and scramble, add salt and pepper to your liking
  3. Scramble add-ins into eggs if desired
  4. While eggs are cooking, warm tortillas in the microwave (about 15 seconds)
  5. Sprinkle cheese on warmed tortillas
  6. Place half of the eggs into each tortilla, wrap it, and enjoy!
  7. To take on the go, just wrap the burritos in foil so they stay warm and eat on the go!
Homemade Egg "McMuffin"
Serves 1
A quick, delicious, better version of a McD's McMuffin. My husband and I typically eat 2 each.

  1. 2 sliced English Muffins
  2. 2 eggs (we prefer organic, free-range)
  3. 2 slices of colby jack cheese (or whichever kind you prefer)
  4. Bacon or Turkey bacon, optional
  5. Salt & pepper to taste
  6. Butter
  7. Cooking spray
  1. Spray your skillet with a little cooking spray
  2. Prep your muffins by slicing them in half and getting them ready to go in the toaster
  3. Crack your eggs into the skillet (keep them whole- don't scramble, and keep them separated)
  4. In a separate skillet, cook your bacon- if using it
  5. While your eggs are cooking, pop your muffins in the toaster
  6. Fry your eggs in the skillet until the yolks do not run, season with salt and pepper to your liking
  7. Place a slice of cheese over each egg and let melt
  8. Once muffins are toasted, spread some butter on them
  9. Once cheese is melted on eggs, scoop them out of the skillet and place each egg on a muffin
  10. If using bacon, place bacon on top of eggs and cheese
  11. Slap the other side of the muffin on top and you're good to go!
  1. Serve with some fresh fruit and some OJ or milk!
